Spice Up Your Life: Cake Edition

A large part of my decision making process has to do with whatever is on sale—in this case, it was the 69 cent molasses and the recent UN efforts of my favorite spice girl:

Although Chow.com promises that this cake only takes minutes to put together (Lies! It took me at least half an hour), it is well worth its sugary moist goodness. Especially with Kulfi. From Chow.com’s Ginger Cake:


* 2 cups all-purpose flour
* 3/4 teaspoon ground cinnamon
* 1/2 teaspoon ground cloves
* 1/2 teaspoon ground black pepper
* 3/4 cup mild molasses
* 3/4 cup granulated sugar
* 3/4 cup vegetable oil
* 3/4 cup water
* 1 1/2 teaspoons baking soda
* 3 ounces fresh ginger, peeled, grated, and finely chopped (from a 4-inch piece)
* 2 large eggs, room temperature



The best tip I’ve learned so far, peeling ginger with a spoon. BRILLIANT


Look at that naked piece of ginger. I have horrible luck with grating ginger so I prefer mincing the ginger instead.

Mix all the dry ingredients together, except the baking soda, which you will reserve for the science-nerd part of this baking project.


In another bowl, mix the dark and white sugar together. Mmm, sugar harmony. Add in the oil.


After boiling 3/4 cup of water, add in the baking soda and sugar mixture. After the pretty foam starts, remove from heat and add in ginger and flour mixture.


Bake at 350F for 45-50 minutes.
